Thanks to Sheela, I have been introduced to cooking in a pressure cooker! Boy, does it make one’s life so much easier to prepare simple dinners! One of them I am about to share with you is Lamb Stew with Whole Roasted Tomatoes.

The Ingredients
Whole Roasted Tomatoes
1 kg tomatoes
Extra virgin olive oil
Fresh ground salt and pepper
Dried Thyme
Lamb Stew
500 g lamb on the bone, cut into pieces
Lemon juice
200 g yogurt
Fresh ground salt and pepper
Olive oil
1 large red onion, chopped
2 cloves garlic, minced
4 medium carrots, peeled and cut into chunks
You can make the Whole Roasted Tomatoes anytime and save it up for at least a week. Well, in my kitchen, it never lasts more than a week at least!
To make these, first preheat the oven to 230˚C. Wash the tomatoes and place them in a baking dish. Drizzle with extra virgin olive oil and roughly coat all tomatoes. Then, freshly ground salt and pepper over it before sprinkling dried thyme leaves. Next, place the dish into the oven and bake it for 60 minutes.
As for making the Lamb Stew, personally, I like to prep them by washing the lamb a few times with lemon juice, salt and water. This takes the smell away. After washing, I add the yogurt along with salt and pepper and allow it to marinade for at least 2 hours or better, overnight. The purpose for this is to tenderize the lamb.
Using the pressure cooker, heat a lug of olive oil on medium to high heat and sautee the red onions till soft and lightly browned. Then, add the garlic for a minute before placing the lamb and its marinade in the cooker but do not stir. Next, arrange half the Whole Roasted Tomatoes with skin on along with the carrots on top of the lamb and cover the cooker with its lid. Cook for 18 minutes (Start timing after the first whistle). Once the time is up, let the stew rest in the cooker till all the steam has escaped on its own for approximately another 15 minutes. REMEMBER: Only remove the lid once all of the steam has escaped!
Finally, VOILA! You’ve got the perfectly aromatic and yummilicious Lamb Stew with Whole Roasted Tomatoes!
