So, I wanted to make some snack or finger food to entertain our friends before dinner at our home with a Mexican theme. Guess what I made? Nothing so easy than Jalapenos, Cheese and Coriander Tortillas served with Guacamole! It’s so easy to make. Have a look!
The Ingredients
8 tortillas
1 cup of shredded cheddar cheese
1/4 cup coriander, chopped
1/4 cup pickled jalapenos, sliced
Guacamole
2 large avocados, pitted and peeled
1/4 cup coriander, chopped
1 tablespoon lime juice
salt
First, make the guacamole by placing the pitted and peeled avocado into a bowl along with coriander and lime juice. Mash them all together and add salt to taste.
Then, heat a non-stick pan on low-medium heat. Assemble the tortillas by placing a piece of tortilla on a flat working surface and top it with 1/4 of the cheese, coriander and jalapenos and another piece of tortilla on top. Next, place it on the pan and lightly heat tortillas on both sides till the cheese melts and tortilla is lightly browned. Remove them onto a cutting board and slice them into quarters. Continue assembling the rest and follow the the same steps.
Now, serve the guacamole in a bowl and tortillas on a platter and enjoy it with your guests or just by yourself as a meal, of course!
