Thinking Thin.

Lately, I’ve been feeling a little heavy. So, thinking thin has been the goal when it comes to my cooking. Trust me, this does not always happen because I love just about anything (non-healthy food included) but at least I am trying. Today, I present you a recipe of very easy to make and a healthy meal!

Cumin & Yogurt Oven Grilled Chicken served with Romaine Lettuce and Cherry Tomatoes dressed with Garlic and Lime Vinaigrette.

The Ingredients

500 g Skinless Chicken breasts

100 g plain yogurt

1/2 teaspoon ground cumin

1/4 teaspoon salt

200 g Romaine lettuce, cut, rinse and dry

a handful of Cherry tomatoes, cut in half

3 tablespoons Olive oil

1/2 lime, juice only

1 clove garlic, minced

salt and pepper to taste

First, mix the yogurt, cumin and salt in a bowl. Add the chicken breasts and cover with a cling wrap. Marinade for at least 2 hours in the refrigerator.

When ready to cook, line a baking tray with aluminum foil and lightly grease the surface with olive oil.  Place the chicken breasts on it and then into the oven 4 inches away from the top and grill for 25 minutes.

Whilst the chicken is in the oven, prepare the dressing by mixing the olive oil, lime juice and garlic into a salad bowl and add salt and pepper to taste.  Set it aside.

After the chicken is cooked, remove it from the oven. Place them on plates.  Toss in the lettuce and cherry tomatoes with the dressing and plate it with the chicken.  Trust me, this is simple and just…. YUM!!!!!
