Usually, the first thing that pops into mind when you hear the word lollipop is a stick with some kind of candy on it. Well, I think of it that way. Today, I am going to share with you another kind of lollipop!
Crispy Mustard Chicken Lollipop
450 g Chicken lollipops
salt and pepper
1/4 cup Dijon Mustard
1 clove garlic, minced
1/2 lime, juice only
1 cup breadcrumbs
First, preheat your oven to 200˚C. Line a baking tray with aluminum foil and grease it lightly with olive oil.
In India, you can easily get frozen chicken lollipops from the grocery store. If you don’t have access to them, check out this video on how you can make them yourself at home. Next, season the lollipops with salt and pepper. Set it aside.
Place the mustard, lime juice and garlic into a bowl and mix them well.
Personally, for the breadcrumbs, I like to use stale and dried out baguettes that have been sitting in my refrigerator for a few days. I would blitz them in a food chopper till I get a coarse crumb. However, you can also get croutons and blitz them for the same effect or simply buy ready to use breadcrumbs.
Now, one at a time, coat the meaty bit of a lollipop into the mustard mixture. Be sure not to overcoat or drench it. Then, into the breadcrumbs and place it onto the baking tray. Repeat this step till you are done with all of the lollipops.
Once completed, place the tray into the preheated oven and bake for 35 minutes. They should by then look nice, golden and crispy. Remove, plate them and serve!
