This particular soup has been an all time favorite of mine! I learnt it from my partner. G made it the first time when I was sick as a dog! I remember it very vividly as I was lying in bed feeling helpless and how the fragrant aroma of this soup travelled through the entire apartment. It smelt so yummilicious even before I had it. The truth – it was heavenly and most certainly, healthy in a bowl!
Carrot Coriander Soup
The Ingredients
500 g Carrots, peeled and diced
1 large red onion, chopped
3 cloves garlic, minced
2 tablespoon Olive oil
salt and pepper
1 litre Chicken stock
a handful bunch of Coriander, roughly chopped
First, heat the oil in a pot large enough to hold a litre of stock on medium heat. Sautee the onion till lightly brown and add the garlic for a minute till fragrant. Add the carrots and season with salt and pepper. Stir for a couple more minutes before adding the stock. At this point, allow the stock to boil and simmer for 15 minutes until the carrots have softened.
Next, remove from heat. Add the coriander. Then, using a hand blender, puree everything in the pot till you get a nice, semi-thick consistency. Taste. Add more salt and pepper, if needed. Otherwise, the soup is ready to serve!
FYI, I like to serve this with a dollop of sour cream and garnish it with a coriander leaf but the soup is honestly, just as good without them. Try it and let me know what you think about it!
