I had planned to host a pool party when I thought, “Hmmmm…. How about if I served burgers but not the usual thing?” So, I looked up for a basic meat loaf recipe and gave it a slight twist. Check out my Cheesy Meat Loaf recipe!
1 kg ground beef
1/3 cup milk
1 cup bread crumbs
1 cup shredded cheddar cheese
1/2 cup ketchup
1 cup finely chopped onion
2 teaspoon salt
1/4 teaspoon black pepper
2 eggs, beaten
Preheat the oven to 185˚C. Place all the ingredients into a large bowl and mix them gently. Then, pour into a 9″ x 5″ x 3″ loaf pan.
Using a spatula, press the mixture down so it is nicely packed and has got a smooth top. Alternatively, you can also hold onto the sides of the pan, slam it on a kitchen towel on the countertop to pack it up. Again, use a spatula to create a smooth top like a loaf of bread.
Next, place it into the oven. Bake for about 1 hour till the top is nicely browned and the sides have left the edges of the pan. Allow it to rest so the juices can be soaked up again into the meat loaf before serving.
As mentioned, I wanted an alternative to burgers so I had burger buns on the side when served!
