Canapes before dinner!

I made this some while ago for a dinner party.  Got everything sorted out for the main and dessert but totally forgotten about canapes before dinner. So, I quickly went through my refrigerator and found a Granny Smith apple as well as some leftover from my Stuffed Chicken Breasts with Sundried Tomatoes Cream Cheese and Basil. Canapes of Sliced Granny Smith Apples topped with Medallions of Stuffed Chicken Breasts with Sundried Tomatoes Cream Cheese and Basil.

The Ingredients

1 Granny Smith apple, sliced 1/4 inch thick

1 piece of Stuffed Chicken Breasts with Sundried Tomatoes Cream Cheese and Basil, sliced into medallions

To slice the apple, I used a mandolin with a medium thick option.  If you do not have one, fear not. A knife will also do the trick. Once sliced, place the apple slices into a bowl of salted water till ready to plate and serve.

Next, slice the chicken into 1/4 inch thick slices as well using a knife. Since the chicken is cold from the refrigerator, slicing it becomes easy.

When ready to serve, pat dry the apples and place them on a platter. Then, top them all up with the medallions of chicken. The end result on my platter were 11 pieces of perfectly sliced chicken and apples put together for a party of 4!
