This is my all-time favorite for a quick fix hearty meal. I once made this back in my days in Hawaii and somehow managed to convinced my friend, Gene, a non salmon eater, to love salmon. So, for all of you out there that do not like salmon, give this one a shot and tell me what you think about salmon now. Plus, the other great thing about this recipe is that it is so simple it takes less than 30 minutes to have it on the table!
Grilled Fillet of Salmon on Garlic Green Mushy Peas
The Ingredients
250 g (x 4 pieces) Salmon Fillets, skinless
2 lemons, cut in halves, juice only
salt and pepper
400 g Green Peas, frozen
5 cloves Garlic
This recipe is for 4.
Place each fillet on a sheet of aluminum foil that is large enough to be be turned into packets. Before packing it up, squeeze half a lemon juice on each fillet. Then, freshly ground salt and pepper on every one of them and pack. Turn these packets into the oven and broil or grill them for 15 minutes, 2 inches away from heat. Once 15 minutes is up, unpack and continue broiling or grilling for another 5 minutes to brown the top.
Whilst the salmon is in the oven, place a pot of water, green beans, garlic, freshly ground salt and pepper on the stove and bring it to a boil. Continue cooking for another 5 minutes. Before draining, scoop out a cup of the boiling water and drain. Then, place the green beans and garlic into a blender and half the cup of boiling water and blend. If the mixture is too thick, add a little more water. The end result should not be watery but thick and mushy.
Once the salmon is cooked, remove from the oven immediately. You don’t want it overcooked and dry.
Place a scoop of the garlic mushy peas on each plate and top it off with a piece of salmon and VOILA! Easy dinner is ready to be served!
