A Sweet Beginning!

So, once again, I’m back! This time, I hope I will not go quiet for so long!

I would like to start 2014 with a sweet beginning! Last week, I went through my pantry and found a jar of peanut butter. I looked around and found this recipe that looked too yummilicious not to try out. So, here’s Peanut Butter Banana Bread!

Peanut Butter Banana Bread

The Ingredients

For the bread

1 1/2 cups all-purpose flour

1/4 cup ground flaxseed

3/4 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/8 teaspoon ground allspice

1 1/2 cups mashed ripe banana

1/3 cup plain fat-free yogurt

1/3 cup creamy peanut butter

3 tablespoons butter, melted

2 large eggs

1/2 cup granulated sugar

1/2 cup packed brown sugar

2 tablespoons chopped dry roasted peanuts

Cooking spray

For the glaze

1/3 cup icing sugar

1 tablespoon 1% low-fat milk

1 tablespoon creamy peanut butter

First, preheat the oven to 350°.

Next, prepare the bread by combining flour, flaxseed, baking soda, salt ground cinnamon and allspice in a small bowl. Whisk and set it aside.

Then, combine banana, yogurt, peanut butter, butter and eggs in a large mixing bowl. Beat the ingredients with an electric mixer on medium speed. Then, add granulated and brown sugars and continue beating. Be sure everything is mixed well.

At this point, add the flour mixture to the banana mixture. Beat until just blended. Then, stir in nuts.

Pour the mixed batter into a 9 x 5 inch loaf pan coated with cooking spray and bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Remove from the oven and let it cool for 10 minutes in the pan on a wire rack. Once the time is up, remove bread from the pan and let it cool completely on the wire rack before glazing.

To prepare the glaze, combine the icing sugar, milk, and 1 tablespoon peanut butter in a small bowl and stir with a whisk.

When the bread is completely cool, drizzle the glaze over the bread making sure it covers the top. Now, go ahead and enjoy!
