We had a wonderful weekend with friends but by Sunday, I wanted to do the absolute minimum in the kitchen. So, I dashed off to the supermarket and bought a few ready made items to put together a cheat yet hearty meal perfect for a very lazy Sunday.
Chicken Tortilla Pie.
12 corn tortillas (6-inch), toasted
2 cups cooked, shredded dark-meat chicken (legs and thighs from a whole roasted chicken. reserve the rest for another meal.)
1 can (4 ounces) chopped green chiles
1 1/2 cups Green or Red Salsa (a 16 oz or 1 lbs jar of ready made salsa)
1 cup sour cream
1 1/2 cups Monterey Jack cheese, shredded (6 ounces)
First, preheat the oven to 375 degrees. Using an 8-inch square baking dish, start by layering 4 tortillas, 1 cup chicken, 1/2 the green chiles, 1/2 cup salsa, 1/3 cup sour cream, and 1/2 cup cheese. Repeat this layer once more. Finally, top with the remaining tortillas, salsa, sour cream, and cheese. Then, place the baking dish in the oven and bake until top is browned and bubbling for approximately 30 to 40 minutes. Remove from the oven, cut, serve and ENJOY!!!!
