I am a leftover lover! There was so much gravy left from the Braised Chicken with Tomatillos & Jalapenos that I decided to place it in a tub and refrigerated it. One afternoon, we were home for lunch and got hungry so I thought why not make a rice dish using the leftover gravy? Here’s a very simple recipe for Tomatillos & Jalapenos Pilaf.
The Ingredients
2 tablespoon Extra virgin olive oil
1 cup basmati rice, washed and rinsed
1 cup Tomatillos & Jalapenos gravy, plus 3/4 cup water
Coriander leaves for garnishing
Hard boiled eggs to serve, optional
First, heat the oil in a pot on medium high. Then, add the rice and toss it for a minute or two. Next, add in the gravy and water. Stir. Bring it to a boil. Then, cover, turn the heat to low and simmer for 12 minutes. Once time is up and the rice is cooked, keep it covered and let it stand for 10 minutes. Then, fluff it with a fork and serve the pilaf with hard boiled eggs in a dish or on individual plates and garnish with coriander leaves! ENJOY!!!
