Over the weekend, a friend was visiting from Singapore and I thought, “Why not make dinner instead of going out?” So, I decided to whip up something easy to include dessert. Thanks to the internet, I found this super-easy-to-make recipe, and got this done in minutes! Well, minutes to make but hours later to eat! Nonetheless, it was delicious!
Buttermilk Pudding
The Ingredients
1 1/4-ounce envelope unflavored gelatin
1 cup heavy cream
2/3 cup sugar
2 cups buttermilk
1 teaspoon vanilla extract
vegetable oil for the ramekins
First, combine the gelatin with 1/4 cup water in a small bowl and allow it to stand for 3 minutes. Over medium heat, in a small saucepan, combine 1/2 cup of the cream and the sugar. Cook and keep stirring until the sugar has dissolved. Then, remove from heat and whisk in the gelatin.
Next, in a large bowl, combine the buttermilk, vanilla, and the remaining cream followed by stirring in the warm cream mixture.
Lightly oil six 6-ounce ramekins. Pour the mixture evenly into the ramekins. Then, refrigerate, covered for at least 3 hours or better overnight. Before serving, run a knife around the edge of each ramekin and invert onto plates. BON APPETITE en EET SMAKELIJK!
