Last Sunday, I was not in the mood to cook but wanted to make something simple yet hearty. Luckily, I have these basic ingredients in my refrigerator at all times to whip up yummiliciousness! I call them basic because I normally have leftover rice to make fried rice, homemade marinara sauce whenever I feel like having pasta marinara without the hassle of making it (when I want it), Merguez Sausage because they are simply just so good AND cheese! Who can ever say no to cheese? 😀
Lamb Merguez Sausage and Rice Casserole
The Ingredients
3 cups cooked white rice, (any kind)
10 oz Merguez Sausage, cut into 1/4″ – 1/2″ thick medallions
1 cup blended and pureed, homemade marinara sauce, plus 1/2 cup more for topping
1 cup Monterey Jack Cheese, shredded
First, preheat the oven to 350ºF.
Next, in a large bowl, using a wooden spoon, mix all the ingredients except 1/2 cup homemade marinara sauce. Then, pour everything into a casserole dish. Using the back of the wooden spoon, level the mixture flat. Then, pour the rest of the marinara sauce and using a brush, cover and glaze the top.
Now, place the casserole dish into the oven and bake for 30 minutes. ENJOY!!!
