Lazy made healthy!

It was a very lazy day for me today and so for dinner tonight, I made a very light and easy to put together, Greek Salad!

The Ingredients

1/4 cup Olive oil

1 tablespoon Red wine vinegar

1 clove garlic, minced

Salt and pepper to taste

2 medium cucumbers

4 medium tomatoes

1 small onion, quartered and sliced

1/2 cup kalamata olives

125 g feta cheese, cubed or crumbled

A sprinkle of dried oregano

In a large bowl, mix the olive oil, vinegar and garlic. Add salt and pepper to taste. Set aside.

Peel the cucumbers with a peeler. Cut both ends of the cucumbers and then in half. Remove the seeds with a spoon by scraping it out. Then, cut it into 2cm thick, half moon pieces. Next, cut the tomatoes into half, then half it again and another half. You should get 8 chunky pieces out of each tomato. Now, mix the cucumbers, tomatoes, onions, kalamata olives and feta cheese into the large bowl with dressing. Toss it to coat and sprinkle with dried oregano. Done!

Serve and enjoy! This recipe is good for 2 as a meal or 4 as a side dish.
