Whenever we host dinners at home, I always like to prepare a canape or two. One of my favorite to serve is the Canapes of Quenelle Smoked Salmon with Onions, Capers and Lime Mayo on Rye Bread!
250 g Smoked Salmon, chopped
1 medium Red Onion, chopped
2 tablespoons Capers
2 tablespoons Mayonaise
1/2 lime, juice only
Rye bread, cut into rectangles or squares
Put all the ingredients into a bowl except for the bread and mix them well. To make the quenelle of smoked salmon, get 2 spoons and shape them by scooping a portion off from the mixing bowl and use the other spoon to shape it from the initial scooped out spoon by passing it from one to the other. Repeat the process till you are happy with the formation of the quenelle shaped smoked salmon before placing it onto the cut up bread. Arrange on a platter and serve!
